· english toffee meringue clouds
· chocolate ice cream, your favorite grocery store brand
· whipped cream, your favorite grocery brand or see below for recipe
· fresh mint leaves for garnish
In four of your favorite dessert bowls, place a scoop of the ice cream, gently rest the meringue cloud on top of the ice cream. Press down ever so slightly to secure the meringue without cracking it. Ladle with whipped cream and garnish with small mint leaf.
For the fresh whipped cream: place 1cup of heaving whipping cream and 4 tablespoons of powdered sugar in a large bowl. Beat with an electric mixer on medium high heat just until stiff peaks begin to form. Make sure not to over beat or cream will become butter. Fresh whipped cream with keep in the fridge for 3 days.
